Busy weekend!!

It was a good, but busy long weekend! I spent the morning Saturday baking. It was fun to try out all my new gluten free flours. :D I have made a few things here and there in the past few weeks, but this weekend was my first all out gluten free bake fest. lol I also found a new favorite gluten free recipe blog, Gluten Free Goddess. She has lots of gluten free recipes that are both sweetened recipes and sweetener free, which is nice! I knew that I needed to make up a couple different muffin recipes to help out with breakfasts during the week. Getting up at 5am and having to get the boys up, dressed, fed and out the door by 6:15am is not fun when I have to also try to make something healthy that they will actually want to eat and eat fast enough to get out the door! Haha I made up carrot raisin nut muffins for this purpose as well as an apple muffin recipe that I found online. Those, paired with a smoothie should be enough to fill them up until snack time at the daycare ;D. I also decided to make some granola cakes for snacks/breakfasts, I made the cookie version and it turned out not too bad. I think I will go for the frozen version next time though.

I made up a delicious apple cake to take in to my mom's place for her birthday. It was good, but didn't hold together very well at all. I think I should have packed the flours into my measuring cup instead of loosely measuring them. I am storing them in my fridge and so they have a bit more volume than they would on the shelf. I didn't have the cranberries either so I made it an apple walnut cake instead! While browsing her site(my new favorite!) I found this and had to make it as well! It was sooo good! We ended off the beautiful day today with an amazing supper outside on the deck. Marinated sirloin steak, mashed potatoes, beets and corn fresh from the garden! Connor and Ray were outside and found a salamander today as well! We brought it inside and googled to find out all about it. After reading about what it needs to stay healthy and survive I think we will be letting it go tomorrow afternoon after we get home. It was an excellent homeschooling opportunity though, we learned a lot! :D

Off to bed for me now, 5am comes much too early!!
